MOSTACHONES

Ingredients:

12 eggs.

1 kg of flour.

1 kg of sugar.

1 teaspoon of baking soda or a packet of baking powder.

Ground cinnamon stick to taste.

Olive oil (small glass).

Optionally, cinnamon can be replaced with lemon zest.

 

Preparation:

Separate the yolks and whites. Beat the egg whites until stiff peaks form, then add the sugar. In a separate bowl, beat the egg yolks; once well beaten, mix them with the egg whites, add the baking soda or baking powder, olive oil, and gradually add the flour. When the batter is well mixed, spoon it onto a tray with parchment paper. Bake at around 150°C for 20-25 minutes. It is always preferable to grind cinnamon sticks rather than using pre-ground cinnamon as it is much more aromatic.
