The Subbética is a region with an extensive legacy of traditional recipes, encompassing numerous delicious and varied flavors, which pair perfectly with the extra virgin olive oils of the region and its Montilla-Moriles D.O. wines.
Particularly notable are the homemade pig slaughters that continue to be a clear example of the traditional gastronomy of the region, having a special place at the table, where chorizo, black pudding, or carnival stuffing stand out, among others, and are incorporated into many typical dishes.
